8 Lazy Summer Suppers

When it’s beautiful outside, you belong on the porch sipping a cocktail, not sweating in a hot kitchen. Summer is all about easy. Here are a few of my favorite low-maintenance dinners.

  1. Pasta with Sun-Dried Tomato Pesto & Mozzarella Pearls

Quick, simple, and family-approved — this pasta with sun-dried tomato pesto and fresh mozzarella pearls is a family fave. And here’s the best part: the pesto itself yields enough for two dinners (and freezes well) and the dish is just as good at room temperature as it is hot, so it can double as a pasta salad for a picnic or barbecue.

  2. burrata salad

Peaches, Burrata & Prosciutto with White Balsamic Vinaigrette

This combination of sweet peaches, burrata, and salty prosciutto is a fun play on caprese. With a baguette and bottle of chilled rosé, it’s the perfect light summer supper.

  3. how to make pan-seared salmon

    Restaurant-Style Pan-Seared Salmon

Pan-seared until crisp on top and just barely cooked at the center: this is how I cook salmon when I have to hit the kitchen running. Not only is it fast — 15 minutes start to finish — it’s also elegant.

  4. grilled cheese

Grilled Cheese Sandwiches with Sun-Dried Tomato Pesto

Sun-dried tomato pesto gives these grilled cheese sandwiches a gourmet twist. My son calls them “pizza paninis” since they taste like hot, crispy pizza sandwiches.

  5. shrimp salad

    Old Bay Shrimp Salad

This classic shrimp salad with an Old Bay kick is wonderful piled onto a roll, scooped over a salad, or served with crackers as an appetizer.

  6. salad

    Vietnamese Shredded Chicken Salad

This salad is so satisfying, you can get away with serving it for dinner. It’s easy too: you simply shred a rotisserie chicken, chop some veggies, whisk the dressing and dinner is done.

  7. blackened tilapia

    Blackened Tilapia

Here’s a fast weeknight dinner the whole family will love — tilapia fillets are dusted with a bold Cajun spice rub, then sautéed in olive oil until crisp outside and flaky inside

  8. turkey burgers

    Grilled Turkey Burgers

Italian turkey sausage amps up the flavor of these turkey burgers and makes them incredibly juicy. The best part is that you can throw them together in a matter of minutes.
