Tested & Perfected Recipes

Hi All,

I hope everyone is staying safe during these crazy times. This has been a challenging year, to say the least, but I’m happy to have some good news to share. I’m writing another cookbook!

Once Upon a Chef: Weeknight/Weekend will be released by Clarkson Potter in the fall of 2021. The book will contain 70 quick-fix weeknight recipes for that hectic window between soccer practice and bedtime, as well as 30 leisurely recipes for the weekend, when a few hours of unscheduled bliss stretch before you.

In the Weeknight section of the book, I’ll show you how to create flavorful, restaurant-quality family meals – even on a busy schedule. The recipes reflect my way of thinking that dinner does not always have to be a protein, a vegetable, and a starch. Sometimes it’s a hearty soup, a vibrant salad, a hot baked sandwich, or even breakfast food. Some favorites include:

  • Southwestern Corn Chowder
  • Blackened Fish Tacos with Pickled Onions and Lime Crema
  • Muffuletta Salad with Olive Vinaigrette
  • Indonesian BBQ Chicken with Spicy Cucumber Peanut Salad
  • Eggs in Purgatory with Garlic Toast
  • Everyday Spice-Crusted Salmon with Tartar Sauce
  • Grilled Sausage with Sweet and Tangy Peppers
  • Croque Monsieurs
  • Drunken Noodles with Shrimp
  • Creamy Dijon Chicken with Peas
  • Sesame Ginger Meatballs

The Weekend section of the book will be filled with my favorite recipes for laid-back brunches, family feasts, and decadent desserts. These recipes require time to rise, stew, braise, or bake – perfect for when your schedule isn’t packed to gills – such as:

  • Roasted Cherry Tomato & Basil Quiche
  • Popovers with Salted Maple Butter
  • Cranberry, Orange, and Walnut Scones
  • Shrimp & Sausage Paella
  • Chicken Tamale Pie
  • Roast Tenderloin with Horseradish Cream Sauce
  • Latin-Style Pork Roast with Chimichurri and Black Beans
  • Strawberries & Cream Layer Cake
  • Triple Chocolate Cheesecake
  • Sweet Potato Praline Pie

I’ve been quietly working on this book for the past year and am so excited to share the news with you. As always, thanks so much for your support!

 xo Jenn

    • I have to agree. I am finding myself less and less on other recipe websites. Once Upon a Chef has become my go to when I have a craving for some particular ingredient or want to try to make something new that I have had in a restaurant but have never tried myself or have not yet found a good homemade version… your recipes are nearly always winners for me and my family! Keep up the great work!

Additionally, is there such a thing as choosing our favorite recipes from your website and ordering them to be formatted into a cookbook? I know I can just print them myself but it would be fun to be able to choose them and have someone bind them up in a book (even spiral form). You have so many good ones there, I would also buy that!

  • Hello Jenn, I, like so many others, are a true believer in the reliability of Jenn Segal recipes. You offer so much more than a recipe. I love your clear directions and photos for each step. I follow those directions to a T and learn so much along the way! In fact, I often reread as I work through each recipe. I’ve made so many of your recipes from your blog as well as your cookbook. I recently made your rustic bread (about three separate times) and your cinnamon swirl bread from the cookbook. I’m always amazed how such simple ingredients can create such wonderful results. I would be honored to help you test your recipes for your new cookbook.

  • Exciting news! I’ve written you before to let you know how much I appreciate your recipes…the simplicity of the ingredients and process, yet the delicious complexity of the end product. But more importantly in my household with 3 growing kids, the reliability of knowing that my family will enjoy the meal. Whenever I try a new recipe, my husband always knows when it’s yours. Because it’s always so good! He asks…”this is your girl?” Yep! Thanks Jenn!

At the end of the class, we both decided that we didn’t like the class’s cole-slaw–that we each had our own favorite and better recipe. We were surprised and tickled to learn that we were each talking about YOUR Asian Slaw w/ ginger dressing!

I have stack an inch thick of so many your recipes printed so I can clip them up to read and prepare. Ben has begged me to please put in a binder. Often we split up a recipe to make cooking even shorter . When he makes one of your recipes he sets out all the ingredients just like your pictures. I know he would also really enjoy being a team with me testing your recipes. We enjoy everyone we have tried but really lean to all the flavor in your ethnic choices. Congratulations!!!

  • Jenn, I’ve followed you for years! My kids gave me your cookbook for my birthday and I spread “the gospel of Jenn” to my family and friends. I cannot tell you how many people are now making your blueberry scones. And zucchini bread. And pecan-crusted chicken tenders. I’m a home cook. Not a chef. But my family (4 children, 3 children-in-laws, and 4 grandchildren) think I’m a pretty good cook. I’d LOVE to help with your next cookbook.

  • Hi Jenn,
I’m so glad to hear that your new cookbook is under way! I had discovered your blog only last year and purchased your current cookbook last September. I have cooked and baked so many recipes from both your book and website and have to say that they are always a big success and spot on in terms of flavor, seasoning, and execution/directions. I put you up there with my favorite celebrity chef, Ina Garten. Every recipe comes out great!

I would be very honored to be a recipe tester for your new cookbook. Is there a specific place to add my name to a list of people being considered for this opportunity?

    Thank you,

  • Once Upon a Chef — both the blog & the first cookbook, is my weekly bible! 💙(Well, bi-weekly now that we try to stay indoors for 2 weeks straight.) I’ve always adored food, but greatly feared being a terrible cook. The generosity & thoroughness of Jenn’s recipes helped me become increasingly confident In the kitchen. Also, I thought I would never dip my toes in the baking world – it was way too daunting! But lockdown & Jenn’s blondies pushed me over the edge and I know must include one of her baked goodies in the weekly line-up!

Testing recipes for the book sequel would be such a treat & a huge honor! 🤩

Major congrats to you, Jenn, for another dream come true! 🥂 And thank you for giving us something to look forward to in these crazy tough times.

  • Congrats on your new book! I’m fairly new to your blog … you hooked me last September when a recipe search turned up your yummy “warm lemon pudding cakes.” I’ve enjoyed reading and cooking from your blog ever since and just weeks ago purchased your first cookbook. I’m enjoying the read as much as the recipes as I am learning and eating my way through the pages! Your “pasta e fagioli” is a delicious new spin on an old family-favorite recipe. And, wow, your “sweet, salty, spicy pecans” … easy to make; easy to love. Thanks for sharing your innovative recipes. I look forward to your new collection!

  • Hello Jen! I’ve never commented on your website or recipes, so I am well overdue for sending you a “Thank you.” I do not have any professional cooking training except for what I learned at the knees of my Southern family as well as experience gained through my ‘informal’ catering. I have catered everything from weddings as well as two low-budget movies that were filmed in our area. Hungry movie crews loved the “eat-on-the-go” breakfast burritos. Just recently I catered a small formal dinner for 24 people. The menu included your grilled shrimp skewers, warm lemon pudding cake, and key lime pie (which I made as a tart). A graduate wanted Asian food for her open house this year; Asian beef bowls and cashew chicken scored big. Your recipes are repeated again and again with ease and consistent success for feeding large crowds. Thank you for helping others in their pursuits. You’ve made our lives a lot easier and a whole lot tastier!!

When I’m asked where I got the recipe, I affectionately say, “from my friend Jenn” and everyone knows who I am referring to! I would absolutely love the opportunity to be a tester! I am pretty sure that I have made 90% of your recipes and quite a few are in my regular rotation and on many of my family’s “favorite” lists! You have certainly been the reason that I’ve upped my game in the kitchen! Thank you for providing this blog and for continuing to give us amazing recipes for our family and friends to enjoy!

  • Dear Jenn,
Congratulations! This is such wonderful news for those of us who love everything you do in your kitchen.

I cannot wait to get it. I have loved your first cookbook and sent copies to both of my adult children and they love it too!

I think my husband may love your cookbook and recipes even more than I do, even though he NEVER cooks! I made the sweet corn, zucchini, tomato and goat cheese recipe you shared online recently. I gave him a spoonful as soon as it was ready and he looked at me asked, “who’s recipe?” I said Jenn Segal of course! And he looks at me with another mouthful and said “Damn, she is so good!” It was at that moment that I told him I wish you would come out with another cookbook; my wish has come true – that never happens to me!

Again, congratulations, I am confident this next book will be very successful. You are genius in your kitchen.

  • Congratulations, Jenn! Really exciting news. Can’t wait to get a copy and try the recipes!

I’ve been meaning to write you… I may sound over the top — but during this crazy work from home / covid time period, you’ve changed my family’s life.

My father, who is in his 70s, has never cooked or baked, and has never had an interest. His job is to help mom as needed, with setting the table, cleaning up, or tiny easy sous chef tips, and most importantly: to select and serve the wine. In April 2020, when we were all a bit stir crazy and eagerly trying new things, I sent him one of your recipes, with a suggestion to try it with mom. I thought it was a long shot. Well… he tried it and thanks to your easy to follow recipe and instructions, he nailed it. He’s now hooked and is working his way through your recipes. His favorite is your Kung Pao Chicken. We’re lucky we have a garden with fresh rhubarb, and Dad loves to make your Strawberry Rhubarb Crisp. He makes it for friends, and now calls it his “famous dessert”. He doesn’t like any other blogs, and frequently says “what does Jenn have for me to try?”. He prints your recipes, and records the date he made them and a review rating (ease of process, and if it was a hit). We have a family photo share of Dad proudly showcasing his finished products before anyone can take a bite.

Needless to say, our whole family is loving this development, especially my mother, who says it’s changed their 50 year marriage.

Thank you for all that you do – pouring your expertise and love in to this blog and your books, and making it easy for anyone to fall in love with cooking.

    Forever a fan,
Kathleen, Dad, and the whole Lavery family

  • Hi Jenn- I bought your first cookbook and have made any of the recipes from it. There are 3 very differing appetites in my household but there’s always something in there to please all.
Your ginger cookies are nothing short of ah-maxing, with just one flaw; we can never eat just one!
Looking forward to your upcoming book.
    Happy Cooking and Creating,

  • Very exciting news! I have your first book and follow your blog, love your take on French recipes (I am French and sometimes struggle with French recipes because of ingredients), our favorites are your french lentil soup, your leek parmesan quiche (I add bacon), your thai shrimp curry and your bolognese sauce. Thank you!

I work in healthcare and the current situation leaves me stressed, exhausted and looking for fast but quality meals to prepare after a long day. This new cookbook sounds like the perfect antidote and I’d love to be a recipe tester!

  • So happy for you (and us!) I use so many of your recipes as my “go to” and have learned techniques I didn’t know existed. I like the way your recipes show the ingredients – brands do make a difference – and if there are items I’m not familiar with, the picture helps me look for it at the grocery store.
For the first cookbook I was a tester and felt so special…. you actually answered my emails! Good luck with this one and pick me, pick me. LOL

PS The blueberry muffins are the best ever, ever. In our house almond is not a favorite so I used lemon and lemon zest with vanilla and now I see the Boyfriend Cake uses lemon. Who knew?

  • Hi Jenn,
This news is so exciting! Love your cookbook and have made tons of your recipes. Have abandoned most of my other 300+ cookbooks. Life and meal planning is so much easier with your tried and true recipes. I would love the opportunity to be a recipe tester for you. I am a Home Economist by degree and love to cook. I often find mistakes with other author’s recipes and find myself asking why certain things were caught. I believe in “nothing is obvious to the uninformed” so have a criritcal eye for details. I especially appreciate the fact that you take the time to answer questions. In my “next life” I will go to culinary school!

  • I am so excited for your second cookbook. Your first cookbook has been such a joy. It has been a pleasure to cook your recipes and proudly serve them to family and friends. I am pulling a Julia & Julia with a goal of making every single recipe in the book. The only request I have is to make the page numbers in a darker color. I found the light color page numbers difficult to read.

    • I pre purchased two of your first cookbook, one for myself and daughter. Just made your lemon blueberry pound cake. It is still cooling off. I know it will be delicious because the batter was! Also, we grew up in Charleston, SC (just moved to Idaho) and I never could find a good crab cake recipe. In fact your crab cake recipe and tartar sauce is the best I have ever had and it was the first recipe of yours I tried. The tartar sauce is so good we use any left over as a salad dressing. Love your blueberry buttermilk pancake recipe too! Lastly, going to try your chicken Marsala recipe next week. Finally found Marsala wine. Love your recipes and can’t wait to order your new cookbook as soon it’s available. Best wishes.
