Hi All,
I hope everyone is staying safe during these crazy times. This has been a challenging year, to say the least, but I’m happy to have some good news to share. I’m writing another cookbook!
Once Upon a Chef: Weeknight/Weekend will be released by Clarkson Potter in the fall of 2021. The book will contain 70 quick-fix weeknight recipes for that hectic window between soccer practice and bedtime, as well as 30 leisurely recipes for the weekend, when a few hours of unscheduled bliss stretch before you.
In the Weeknight section of the book, I’ll show you how to create flavorful, restaurant-quality family meals – even on a busy schedule. The recipes reflect my way of thinking that dinner does not always have to be a protein, a vegetable, and a starch. Sometimes it’s a hearty soup, a vibrant salad, a hot baked sandwich, or even breakfast food. Some favorites include:
- Southwestern Corn Chowder
- Blackened Fish Tacos with Pickled Onions and Lime Crema
- Muffuletta Salad with Olive Vinaigrette
- Indonesian BBQ Chicken with Spicy Cucumber Peanut Salad
- Eggs in Purgatory with Garlic Toast
- Everyday Spice-Crusted Salmon with Tartar Sauce
- Grilled Sausage with Sweet and Tangy Peppers
- Croque Monsieurs
- Drunken Noodles with Shrimp
- Creamy Dijon Chicken with Peas
- Sesame Ginger Meatballs
The Weekend section of the book will be filled with my favorite recipes for laid-back brunches, family feasts, and decadent desserts. These recipes require time to rise, stew, braise, or bake – perfect for when your schedule isn’t packed to gills – such as:
- Roasted Cherry Tomato & Basil Quiche
- Popovers with Salted Maple Butter
- Cranberry, Orange, and Walnut Scones
- Shrimp & Sausage Paella
- Chicken Tamale Pie
- Roast Tenderloin with Horseradish Cream Sauce
- Latin-Style Pork Roast with Chimichurri and Black Beans
- Strawberries & Cream Layer Cake
- Triple Chocolate Cheesecake
- Sweet Potato Praline Pie

Got Weeknight/Weekend for the hubs for Christmas. We love everything we’ve made from it.
I was delighted to receive “Once Upon a Chef: Weeknight/Weekend” as a Christmas gift, and I’m working my way through it like I’ve never used a cookbook before! I think I’ve already tried (and thoroughly enjoyed) a dozen of the recipes (with Lasagna Soup and Creamy Dijon Chicken as the much-applauded favourites so far).
I’m already looking forward to your next masterpiece!

I am just so happy for you Jen. I like thousands of others have been cooking your delicious recipes for a long time. I was so excited when you wrote your first cookbook and I have to say I get goosebumps at the success you have had! I remember when you were writing about going on your first book tour and I speak for us all when we just knew you would have a big success. I gifted your first book to many friends here in the UK and believe me now they are all big fans! They all say the same, that you have a way of explaining the recipes that make us feel we have a professional chef who is also a friend in our kitchen. I am an actress/ Singer here in the UK and this past year has not been kind to my profession just like the hospitality industry and many others. The fact that you have a new cookbook out is fantastic and a nice bright light for the future. I can’t wait to get a copy! I have been using your recipes for quite sometime now. I have always been a nervous cook but this has all changed thanks to you! You making scratch cooking so enjoyable as your recipes are easy to follow and virtually foolproof. My Son is just about to leave home and going with him will be your cookbooks, even he has learned to cook your fabulous recipes. I find myself visiting quite a few on-line chefs, but frankly, you are by far my favourite! I am so pleased to hear that you will (finally!) have a cookbook. Jenn, thanks for the privilege to joining the group of testers for your upcoming cookbook. I am visiting my son in the OuterBanks, NC and anticipate many more invitations in the future, especially after supplying meals from my test group. Last week I made my 2nd Roasted Cherry Tomato and Basil Quiche to freeze for my trip. The night before I left, I made the Oven Roasted Chicken Shawarma and brought the leftovers with me as well as all the ingredients for the Seafood and Sausage Paella. The quiche, shawarma and paella were all hits and left me anticipating next year’s cookbook.
So glad the recipes were hits with the family!

I love testing the recipes especially the arugula watermelon salad. I’ve had it at several restaurants but couldn’t find a recipe that matched the restaurant versions until now. Looking forward to the new cookbook. I am sure it will be another go to cookbook in my library.

I have to agree. I am finding myself less and less on other recipe websites. Once Upon a Chef has become my go to when I have a craving for some particular ingredient or want to try to make something new that I have had in a restaurant but have never tried myself or have not yet found a good homemade version… your recipes are nearly always winners for me and my family! Keep up the great work!

I’d love to test recipes! Was confused about the different groups but any and all. I’ve given your first cookbook as a gift and have steered many to your website (made a quadruple recipe of the squash soup more than once for church events and everyone wanted the recipe)
Sorry you found the groups to be confusing! If you refer to the email I sent on 8/12, you’ll see the 6 different groups of recipes. Just pick the one you’d like most to test and then indicate your choice on this form. Hope that clarifies and thanks for your help!!

Additionally, is there such a thing as choosing our favorite recipes from your website and ordering them to be formatted into a cookbook? I know I can just print them myself but it would be fun to be able to choose them and have someone bind them up in a book (even spiral form). You have so many good ones there, I would also buy that!

Hello Jenn, I, like so many others, are a true believer in the reliability of Jenn Segal recipes. You offer so much more than a recipe. I love your clear directions and photos for each step. I follow those directions to a T and learn so much along the way! In fact, I often reread as I work through each recipe. I’ve made so many of your recipes from your blog as well as your cookbook. I recently made your rustic bread (about three separate times) and your cinnamon swirl bread from the cookbook. I’m always amazed how such simple ingredients can create such wonderful results.
