Hi All, Great knife set giveaway this week thanks to Wüsthof! The set includes all the essentials: a 6-inch chef’s knife for chopping and mincing, a 4-1/2-inch utility knife for slicing, a 3-1/2-inch parer for peeling and paring, a pair of handy kitchen shears, and an attractive hardwood storage block. I can personally attest that these knives last forever — I got my first Wüsthof set fifteen years ago in culinary school (they even have my maiden name engraved on them) and am still using them every day.

I have decided that I must be a quiche freak. I make them frequently, and am always looking for new and different combinations of ingredients. That is why I loved your Leek Parmesan Quiche. Different veggies and cheese give it such a unique taste. I served it with a champagne fruit salad, and bloody marys. What a fun girl’s shower/brunch!

I made your Chicken Chili with White Beans yesterday. It was excellent.
My tweaks: I cooked a little pasta to serve with the chili ( its just something our family enjoys) AND I added 1/3 cup fresh cilantro, minced.
topped it with a dollop of sour cream

The Mirin Glazed Salmon was a big hit with my husband and has become the favorite way to cook salmon. We omit the rice winegar and water and cook on the BBQ. We are fortunate to live on the coast of Oregon and the salmon comes from the bay into the pan. The fish flakes off in silvers and is delicious with beautiful flavor from the marinade.
Made your roasted tomato salsa and it was a HUGE hit. I prefer to de-seed and de-vein the jalapenos, roast them, and then add what I need in the blender by taste testing to hit the heat level I want.
Loved the home made pickes… So eady and delicious!
Green Beans with Cranberries and Walnuts is a perfect fall dish that I’ll be making again this year. Roasting the green beans gives them a nice mellow flavor, and gets rid of that green-bean “squeakiness”.
Chocolate Cream Pie is absolutely delicious for you dark-chocolate fans. I have made it as-is, and also using a ready-made chocolate crumb crust, then garnishing just before serving with canned whipped cream — not as fancy, but still delicious.
Chocolate Toffee Matzo Crack is an awesome holiday recipe. I made several batches last year for teacher gifts — easier and quicker than my microwave toffee recipe, with the same great taste! Will be on my list again this year.
Grated Carrot Salad is one of my all-time favorites, and the recipe that first introduced me to Once upon a Chef. I make it at least twice a month. Use your food processor to grate the carrots, and it comes together in under 10 minutes! I use EVOO for all the oil in the recipe because I like the taste.
I love your Asian Slaw recipe. I like to serve it with grilled chicken, or alone as a veggie meal with some crusty bread or pita chips. Great way to get in your five-a-day!
I made the Grilled Moroccan Chicken and it was amazing! I added a little extra garlic flavor with garlic powder and only marinated for about 4 hours. Delicious!
I made your roasted carrots with thyme last year as my contribution to Thanksgiving, but I decided to add beets (my new favorite root veg) as well. The color combination really brightened the table and the flavors are perfect together – improving on an already delicious dish – thank you 🙂
