Pineapple Avocado Salsa

Ingredients

  • 1½ cups diced fresh pineapple
  • 2 tablespoons fresh lime juice (from 1 lime)
  • ½ cup finely diced red onion (from 1 small red onion)
  • ½ cup seeded and diced English cucumber (from 1 small cucumber; see note)
  • 3 tablespoons seeded and minced jalapeño pepper (from 1 to 2 peppers)
  • 1 tablespoon sugar
  • 2 tablespoons vegetable oil
  • ¼ teaspoon salt
  • ¼ cup chopped fresh cilantro
  • 1 large ripe avocado, cut into small dice (about 1 cup)

Instructions

  1. In a bowl, combine all the ingredients except the avocado and toss until evenly combined. Refrigerate until ready to serve, up to a few hours. Right before serving, add the avocado and gently stir, taking care not to mash the avocado. Taste and adjust seasoning, if necessary.
  2. Note: English or hothouse cucumbers have a thinner, more tender skin and do not require peeling. If substituting with a regular cucumber, which has a thicker and often waxed skin, it's best to peel it first.
