ASPARAGUS-FETA-SALAD

This grilled asparagus and feta salad is the kind of wholly satisfying dish that makes you wonder if you might possibly be a very happy vegetarian. It’s so simple, yet so good.

Asparagus feta 11

Begin by tossing big, thick asparagus spears in olive oil, salt and pepper — and get your grill nice and hot.

Asparagus feta 3

Grill the spears for a few minutes, turning occasionally, until tender-crisp.

Asparagus red onion 12

Chop them into bite-sized pieces and toss with the crumbled feta and lemon zest.

Asparagus feta 6

That’s all there is to it! Serve at room temperature with grilled fish, chicken or meat (particularly these Perfectly Grilled Chicken Breasts or this Grilled Flank Steak).  Or try it on its own for lunch or a light bite — all you need to complete the meal is a hunk of warm crusty bread to sop up all the lemon-scented olive oil and feta.

Grilled Asparagus & Feta Salad

Servings: 4
Total Time: 15 Minutes

Ingredients

  • 1 bunch thick asparagus, about 24 spears, ends trimmed
  • 3 tablespoons extra virgin olive oil, divided
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest, from one lemon
  • 1 tablespoon freshly squeezed lemon juice, from one lemon
  • 1/3 cup crumbled feta cheese

Instructions

  1. Preheat grill to high.
  2. Place asparagus spears in baking dish and toss with 2 tablespoons olive oil, salt and pepper.
  3. Put asparagus on the grill, making sure spears are perpendicular to grates so they don't fall through. Set asparagus dish next to grill (do not clean). Cover and cook asparagus for 3-4 minutes, until nicely browned and tender-crisp. Remove asparagus from grill and place back in baking dish. Let cool, then transfer spears to cutting board and cut into 1½" pieces. Place cut asparagus back in dish, then add remaining tablespoon olive oil, feta, lemon zest and lemon juice. Toss gently and season with more salt, pepper and lemon juice to taste. Serve room temperature or cold.

This is the best-ever recipe for asparagus! We were grilling a steak, so we threw the asparagus in a perforated grill pan and grilled it, but otherwise followed the recipe as written. What a great flavor combo of lemon and feta along with the asparagus. Wonderful addition to a warm fall weekend meal of spice rubbed steak and the garden’s last cherry tomatoes. Thank you, Jenn!

What a marvelous flavor combination! As a lover of both Asparagus and Feta ~ I can’t believe I didn’t think of this myself…

While I’m saving this simple but sensational salad for new Spring, when Asparagus is in abundance. It’s harder to find really good asparagus this time of year ~ but I’m going to be on the look out for it.

The rest of the ingredients: Feta, Lemons, Olive Oil & Kosher Salt and fresh Peppercorns are all staples in our household and I ALWAYS have those on hand!
Thanks Jenn ~ I have a feeling we’ll be eating and enjoying often.

  • This was THE BEST way I have ever cooked asparagus!! Ain’t is so simple yet flavorful. Grilling the asparagus and then adding the feta and lemon and letting it cool to room temperature makes the flavor just shine. Five stars!!

  • This was delicious the day before Christmas when I first made it, but the next day was way too lemony. I thought it would be a great dish to make ahead, but it wasn’t. It was really good after it was first made though

  • I had a similar dish at Noodles and Co. They substituted the feta with parmisan and I’m sure since this was fast food it was tossed with lemon juice. T was still very good and very expensive. This recipe is amazing and so much cheaper!

  • I used a broiler pan- the kind that comes with most ovens to roast my asparagus on the grill. Most people have one of these pans and I was able to use thinner asparagus in the recipe.

  • Grilling and sauteing are my favorite ways to cook asparagus! The addition of the feta and lemon send it over the top. Love this idea! Adding tomatoes sounds really good too.

  • I am on a diet that is vegetable rich and this sounds great. Can I bake it instead of grilling?

    - Tamar on June 25, 2012 Reply
    • Hi Tamar, You could roast the asparagus but the flavor wouldn’t be quite the same. Hope that helps!

  • sounds good! I’m going to try this tonight but instead of grilling it right on the grate I’m going to use a grill basket for fish/veggies. That way I can cut it into pieces first and I won’t lose any asparagus to the coals! You still get the grill marks and charred flavor!

  • Hi Jennifer,
First I must say – I am so grateful to have discovered your site via Huffington Post. You’ve inspired me to cook more and actually enjoy it – thanks to your helpful advice, gorgeous pictures, and of course – the delectable finished product. So far I’ve made 5 of your recipes in the last 3 days!!!- and will make them over and over again. Thank you!

I would love to make this recipe – but have no bbq – so – I was thinking of roasting the asparagus instead. What do you think?

    - Heidi on April 7, 2012 Reply
    • Hi Heidi, Thank you! I’m so glad you’re enjoying the recipes. It’s perfectly fine to roast the asparagus…Simply preheat your oven to 450 degrees, and then toss the asparagus with olive oil, salt and pepper and roast on a foil-lined baking sheet for 8-10 minutes, or until tender-crisp.
