However, this Vietnamese chicken salad recipe, inspired by the classic Vietnamese dish gỏi gà, is one I can get away with serving for dinner. It’s satisfying and packed with bright, spicy Southeast Asian flavors. Plus, it’s a breeze to make. Just shred a rotisserie chicken, chop some veggies, whisk the dressing, and dinner is done.

The recipe makes enough for two generous main course salads, and if you want to round out the meal, just add some crispy spring rolls or summer rolls on the side.

Ingredients 

For the Salad

  • 2 heaping cups cooked shredded chicken, from one store-bought rotisserie chicken
  • 4 cups shredded napa cabbage
  • 4 scallions, thinly sliced
  • 1 cup grated or matchstick carrots
  • 1 red bell pepper, sliced into bite-sized pieces
  • ½ cup roughly chopped fresh mint
  • ½ cup roughly chopped fresh cilantro
  • ½ cup chopped peanuts

For the Dressing

  • ¼ cup fresh lime juice, from about 3 limes
  • 2 teaspoons Sriracha sauce
  • 3 cloves garlic, minced
  • 2 tablespoons sugar
  • 3 tablespoons fish sauce (preferably a brand imported from Thailand or Vietnam)
  • 3 tablespoons vegetable oil

Instructions

  • In a large salad bowl, combine all of the salad ingredients except for the peanuts.
  • In a separate bowl, combine all of the ingredients for the dressing; whisk until the sugar is dissolved.
  • Right before serving, toss the dressing with the salad. Transfer to a serving bowl and garnish with the peanuts. Serve cold.

    • Hi Sharon, you can replace the fish sauce with soy sauce. The dressing won’t have that authentic Vietnamese flavor, but will still be delicious.

    It was a hot day today andd your email with this recipe arrived. Decided it was just the thing for dinner! I poached my own chicken, as the store shredded chicken is rather dry. I altered the dressing just a wee bit, using 1/2 olive oil and half avocado oil and half sriracia sauce and half of the same brand’s excellent chili garlic sauce. Although hesitant to use all the fish sauce, I did. The dressing was perfect. I did omit peanuts, as my husband is extremely allergic. We both really loved this as we have loved so many of your recipes.
