I’ve made a lot of brownies over the years, but I always come back to this recipe. Made with real chocolate instead of just cocoa powder, it has a rich chocolate flavor and irresistibly fudgy texture that most brownie recipes and boxed mixes simply can’t match. It comes from pastry chef Nick Malgieri’s cookbook Chocolate: From Simple Cookies to Extravagant Showstoppers.

What You’ll Need To Make Homemade Brownies

  • All-Purpose Flour: The base of the brownies; measure using the spoon and level method for accuracy.
  • Sugar and Brown Sugar: White sugar adds sweetness and a light texture, while brown sugar contributes to moisture and a deeper flavor due to its molasses content.
  • Eggs: Bind the ingredients together, add moisture, and help create a rich texture in the brownies.
  • Unsalted Butter: Adds richness and flavor.
  • Vanilla Extract: Complements the chocolate and adds depth of flavor.
  • Salt: Balances the sweetness and enhances the flavor of the chocolate.
  • Semi-Sweet or Bittersweet Chocolate: Use good quality chocolate, like Ghirardelli or Guittard, and opt for real chocolate bars instead of chocolate chips. Chocolate chips contain stabilizers and are designed to retain their shape when baked, making them less suitable for recipes that require melted chocolate.

Step-by-Step Instructions

Step 1: Combine butter and chocolate. Melt the butter in a microwave-safe bowl and add the chopped chocolate. (You can just break it apart with your hands; no need to dirty a cutting board.)

Step 2: Melt the chocolate. Let the chocolate sit for a minute, then whisk until the chocolate is completely melted. If necessary, you can pop the bowl back into the microwave for 20 seconds or so and whisk again.

Step 3: Combine the eggs, sugar, and flavoring. Meanwhile, whisk the eggs in a large bowl, then add the sugars, salt and vanilla.

Step 4: Mix well. Whisk to combine, making sure no lumps of brown sugar remain.

Step 5: Add the chocolate mixture and flour. Whisk in the chocolate-butter mixture, then add the flour.

Step 6: Mix the brownie batter. Whisk the mixture until just combined and no lumps of flour remain.

Step 7: Prepare the pan. Line a 9×13-in baking pan with parchment paper, then either spray the paper with non-stick cooking spray or grease with butter. Be sure to leave an overhang; this makes it easy to lift brownies out of the pan before cutting. Pour the brownie batter into the prepared pan.

Step 8: Bake the brownies. Bake for about 45 minutes, or until the top has formed a shiny crust and the batter is moderately firm.

Step 9: Cool, cut, and serve. Cool completely on a rack, then use the parchment overhang to transfer the un-cut brownies to a cutting board. Use a sharp knife to trim the hard edges (those are for the cook!). Cut the brownies into squares. The brownies will keep well in an airtight container for up to 4 days; freeze for longer storage.

Ultimate Fudgy Brownies

Ingredients 

  • 1 cup (2 sticks) unsalted butter
  • 8 oz bittersweet or semisweet chocolate, roughly chopped (I use Ghirardelli bars)
  • 4 large eggs
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 1 cup (packed) dark brown sugar
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour, spooned into measuring cup and leveled-off

Instructions

  • Preheat the oven to 350°F (175°C) and set a rack in the middle position. Line a 9 x 13-in (23 x 33-cm) pan with parchment paper (bring parchment up sides of pan so there is a slight overhang) and grease with butter or nonstick cooking spray.
  • Place the butter in a medium microwave-safe bowl and melt in the microwave until bubbling. Add the chocolate and whisk until the chocolate is completely melted. The heat from the butter should be enough to melt the chocolate completely, but if not, place the chocolate-butter mixture in the microwave and heat for 20 seconds or so, then whisk again. (Alternatively, combine the butter and chocolate in a heat proof bowl and set over a pan of simmering water. Stir occasionally until melted.)
  • Whisk the eggs in a large bowl. Add the salt, granulated sugar, brown sugar, and vanilla; whisk until smooth (be sure no lumps of brown sugar remain). Whisk in the chocolate-butter mixture, then add the flour and whisk until the batter is uniform.
  • Pour the batter into the prepared pan and spread evenly. Bake for about 45 minutes, until the top has formed a shiny crust and the batter is moderately firm. Cool completely in the pan on a rack.
  • Use the parchment overhang to lift the brownies out of the pan, transfer them to a cutting board, and separate the parchment from the edges. Using a sharp knife, trim away the edges and cut the brownies into 24 (2-in) squares.

Notes

Make-Ahead/Freezing Instructions: The brownies can be stored at room temperature for up to 4 days or refrigerated to extend their shelf life by a day or two. They can be frozen for up to 3 months; after they are completely cooled, cut them into squares, wrap tightly in foil, and then place them in an airtight container or sealable plastic bag. Thaw overnight on the counter before serving.

  • Hi,
    I just made these, and they turned out somewhere between a cake and a brownie.
    For some reason, they turned out poofy. They also had a taste that was not quite browni-ish.

    Half of my brown sugar was light, not dark. The vanilla extract I used was syrupy (Dr. Oelkers). Other than that, I can’t think of what happened.

    The commenter that changed the core ingredient (melted chocolate) to a dry cocoa powder and then rated the recipe one star?
    This brownie recipe is the absolute best as those who actually made the recipe have commented. Great chewy, chocolately gooey brownies with a shiny top crust. I’ve made it with half milk chocolate, half semi sweet chocolate bars and it’s just as tasty. Can’t go wrong with a OUAC recipe that Jenn has perfected and graciously shared with the rest of us.
    Never go back to boxed brownies again.

    Mine turned out horrible I think there’s too much eggs and sugar and not enough flour but I also used cocoa power instead of chocolate so that part was my fault

    This is the absolute best recipe for brownies. As I am pretty health conscious, we make them with Panella sugar (instead of white sugar) and of course the brown sugar. I also use whole grain Einkorn flour and need to add one extra egg for the moisture. I use Guittard Bittersweet Chocolate as our preferred chocolate for baking. They are the best brownies.

    These are delicious and such an easy recipe. I have made many different brownie recipes from various websites and this is one of the best. I think the chocolate flavor is enhanced by 1/2 teaspoon of espresso powder and a little extra salt, from 1/4-1/2 teaspoon. I also like to add 1/2-3/4 cup chocolate chips. Thanks for a great recipe!
