A simple mix of grapefruit, lime, tequila, and club soda makes this one of the easiest (and most refreshing) cocktails to throw together. Perfect for warm-weather sipping.

The Paloma is one of those cocktails that just feels refreshing from the first sip—bright, citrusy, and perfectly balanced between sweet and tart. It’s made with fresh-squeezed grapefruit and lime juice, a splash of tequila, and a little fizzy club soda.
No one seems to totally agree on where it came from, though it’s often linked to Don Javier Delgado Corona, the longtime owner of La Capilla, a tiny, old-school bar in Tequila, Mexico. However it came to be, it’s an easy, thirst-quenching drink that’s perfect for a sunny afternoon.

Ingredients
- Kosher salt, for the rim
- 1 grapefruit wedge
- 2 oz fresh grapefruit juice
- ½ oz fresh lime juice, from 1 lime
- ¼ oz simple syrup (or 1 tsp honey or agave nectar)
- 2 oz tequila or mezcal
- 2 oz club soda
Instructions
- Pour a little kosher salt onto a small plate. Rub the rim of a highball glass with the grapefruit wedge, then dip the rim in salt. Set the wedge aside for garnish.
- In the glass, combine grapefruit juice, lime juice, and simple syrup (or sugar). If using sugar, honey, or agave, stir until dissolved.
- Add the tequila or mezcal and fill the glass with ice. Stir until chilled, about 30 seconds.
- Top with club soda, give it a gentle stir, and garnish with the reserved grapefruit wedge.
